What a private chef actually includes

In the Caribbean and Indian Ocean, chef service is most often bundled: breakfast and one further meal daily, with provisioning billed at cost plus a 10–20% handling margin. In the Mediterranean, the more common structure is a chef engaged separately at a day rate, with the villa supplying only the kitchen and a housekeeper.

Ask three questions before you compare rates: is the chef resident or arriving daily, are provisions inside or outside the quoted figure, and how many covers is the day rate written for. A house that looks $1,200 a night cheaper often loses that margin on the first grocery invoice.

Across the estates we track, a resident chef adds roughly 12–22% to the nightly rate in the Caribbean festive window, 8–15% in the Mediterranean high season, and rather less in Bali and Thailand where staffing costs are structurally lower and chef service is close to standard.

Dietary programmes — full plant-based, kosher, medically supervised — sit outside standard service everywhere and are quoted per stay.
